Making granola is one of those things that sounds complicated, but is indeed, super easy. After Everett was born, my friend Lesley turned me into a homemade granola snob. She gifted me with a giant bag of homemade granola, and ever since then, I haven’t been able to eat the store-bought stuff. If one of your goals for 2013 was to spend more time in your kitchen, here’s a non-intimidating recipe to start with!
Cherry, Almond and Cinnamon Granola
Ingredients:
- 4 cups old-fashioned rolled oats
- 2 cups sweetened, shredded coconut
- 2 cups sliced almonds
- 1 1/2 cups dried cherries, chopped
- 1/2 cup vegetable oil
- 1/3 cup good honey
- 2 teaspoons ground cinnamon
Directions:
Preheat the oven to 350 degrees. Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan and sprinkle with cinnamon. Bake for 30-35 minutes, stirring once halfway through bake time.
Remove the granola from the oven and allow to cool, stirring occasionally. Package up in airtight jars or glass containers, and enjoy yourself or give some away as gifts!

Is there a substitution for the vegetable oil??
Hi! I’m not sure….I think any oil would do….you might be able to use melted butter or a fruit puree also? Those are common substitutes but I’ve never tried them with granola!
