crockpot soup.


Ingredients:

-2 cups chopped cabbage
-1 cup chopped carrots
-1 cup chopped celery
-1 small onion, chopped
-1 box vegetable broth
-1 can diced tomatoes
-Salt, pepper, oregano, & thyme to taste

Combine all ingredients and cook on low in crockpot for 6-8 hours.

*I used fresh veggies from our CSA box to make this soup. Don’t know what a CSA box is? Check out my story on community supported agriculture in the spring issue of The Violet, page 48. Happy cooking!
