super smoothies to the rescue.

My latest obsession = super smoothies. I call them super because acai and spinach are well known super foods. They are basically making me more and more super.

If you’d like to try one yourself, it’s a pretty simple recipe:

1 package frozen acai
1 medium banana
1 cup strawberries
1 cup orange juice
1 organic lowfat vanilla yogurt
1 handful fresh spinach

Add 1 cup crushed ice and blend until smooth. Serves two. Enjoy!

    Haha, I’m reading this while eating (drinking? slurping?) a smoothie. A few weeks ago I tried adding kale to my fruit and yogurt usual mix and I couldn’t get over the weird texture. Have you noticed if spinach changed the consistency?

    I love smoothies. I call mine Green Monsters though because the spinach always makes mine green. You should add a little more spinach to yours ;) I promise you can’t taste it!

    I’ve been on a smoothie kick too! Since we’re doing the whole vegan thing, I’ve been using Coconut Milk (vanilla) and also adding kale. Kale turns your smoothie green, but as long as you have banana and berries you can’t even taste it. The coconut milk is to die for and gives your smoothie an Orange Julius taste. So yummy!

    I’m curious about how the spinach adds to the smoothie flavor wise? I’ve always avoided anything green cause I’m nervous it will tarnish the fruit flavor I love so much.
